Patti Cake Recipe

For those who are interested here is the recipe for "Patti Cake" that I posted a picture of below.

1 box yellow cake mix
1 stick melted butter
1 egg beaten
1 cup chopped nuts (I use pecans because I grow them and have a freezer full.)

Mix ingredients together and pat into a buttered pan (9 x 13).

1 box of confectioners sugar
2 eggs
8 oz package of cream cheese

Beat until smooth. Pour in pan over cake mixture and bake 45 minutes at 350 degrees.

Variation: Stir chocolate chips into the topping.

This recipe is simple and quick. It's great when your child comes home and says, "I forgot! I need something for the party tomorrow!".

This is Michelle, Aunt Kay's niece, and I am really enjoying your blog! When she was here a few weeks ago she told me about it.

We also are trying (key word is trying) to live a more simple, frugal lifestyle. It is not always easy in our fast pace world but I really enjoy it. I appreciate the knowledge that you are posting to your blog. I have already used some of this info myself. The savings on the yeast and washing detergent (I did not like in the dish washer.) will be great! I also make our own bread, tortilla's, bagels, etc...

My husband was raised on a large soybean farm (chemical based) but prefers to use the "natural" way so we garden and can our goods.

My kids are learning valuable knowledge that most children know nothing about. I feel that this foundation will help them in their future.

I plan to try to raise chickens in the spring and if there was a dairy near by I would make our own butter. (I have done before and it is delicious!)

So please keep up the good work! I, for one, enjoy knowing there are others out there making a difference!
